Three characters seemed to be associated to animals. I guess for it to be funny and also describe their characteristics.

Megumi-fox/ often referred to as; foxy lady doctor.
Kuaoru(?)-Raccoon
Misao-Weasel

What I think it might mean:
Fox- cunning, sly and can mean hot
Raccoon- Sneaky
Weasel- A thief

Any one know of a reason they are associated with these animals?

Kaoru is associated with the racoon ('tanooki' in Japanese) because that's how Yahiko always insults her. Later on, so do a lot of other people. Megumi is often called a 'fox-lady' because of her devious nature. The japanese associate foxes (kitsune) with illusion and falsehood. When she first shows up, Megumi either evades or deflects all questions about herr past. Hence, 'fox-lady.' She grows fox ears in a few episodes, too; and yes she is hot. Misao is a 'weasel-girl' because she's a thieving, quick little ninja.

You should note that for the most part, thet don't like these nickames: look at Misao's reaction in the pictures.

Incidentally

Racoon= Dumb yet adorable, plump, stubborn.

Weasle= Sly, small, energetic, and BAD tempered.
