If the 'cursed' are hit with ANY drop of cold water they will change. I figured this out after watching the 2nd and 3rd episode of Ranma 1/2.

I don't think that is right...
I notice that they have to drench them selves with water for them to change. Plus, even with an umbrella they still would get a little wet and they would have change if it was just a drop of water.

yea, but when he was fighting he tried as hard as he could to not get one drop of water, he wouldn't even step in it. Also when he was going to school the first day he had to protect Akane from that guy who liked her, he changed as soon as one drop fell from the sky. Well his father in panda form saved him (even though he did change)

There's really no proof that he changed as soon as one drop of water fell on him. There was enough time for him to get much wetter before Genma ran him into that shack.
Besides, in the early stages of the manga/anime it makes sense that he would avaid all water, because he was new to the curse and so wouldn't really know exaclty how much water was required for a change.

In the Tea Ceremony series of the manga, Ranma shows his guy form to whatshisface. He takes a bowl of hot water used for making tea and says "Good ... just enough water ... " an' then pours it on his head. Sounds to me like there is some sort of limit.

Actually, he comments on the water temperature, not on the ammount of water, unless my copy of the manga is funky.

But, nonetheless, he stuck his hand in there to test the temperature, and he didn't change until he poured the thing on his head. Evidently, there is a certain amount of water he needs to touch.
I also remember a point in the anime where we see Ryouga walking down the street, his umbrella still stuck on his pack. A drop of rain hits his nose, an' he yells "Ah, why now!?" before the rain really picks up, an' before he really transforms.

It may be that their heads have to be wet in order to transform? Or maybe that they have sufficiently wet to be considered WET, not just mois or something. Who knows, Takahashi works in mysterious ways. :p

Sufficiently wet, in my opinion. Like I said, a drop of water hit Ryouga on the nose, yet he was fine until the rains really came down. ^^
