SPOILERS!!!!!!!!!!!!!!
Can someone explain to me Akito's curse? If he dies, do the rest of the juunishi die too? Does he change into anything? If you're taking information from the manga, please label it spoilers. But if its from the anime, no need to label it.

If he dies, the others do not die. Where did you get that.
I believe he is afflicted with all of the curses, so he could change into any of them. I was wondering about a combination of them...

Since the manga hasn't gotten that far into explaining exactly what part Akito plays to the curse and what happens to him, there are rumors going around that he's sickly and weak because he "might" be holding back the curse. It was stated that he was the "god" in the jyuunishi story so I don't think Shigure meant he literally bore the full weight of the curse meaning "he changes into all the animals" but eh... we're still to find out exactly how heavy that curse he bears is.
Also, if killing / Akito dying meant breaking the curse, it's pointless for Hatori and all the jyunishi to be so worried about his health! This somehow makes the "holding back the curse" theory valid in some ways that the jyuunishi might somehow want Akito to stay alive because he's the only one who can do something about "it."
So far in the manga, it seems like Akito is disappointed that his plans for using Tohru to "torture" his lackeys to act their part on the story isn't working, he's really annoyed that she's gone so far as to attract all of them to her so he's putting something into action that has something to do with the curse.
too many mentions of the curse I wish the author would already break it out! Volume 12 & 13 aren't out yet even though there are enough chapters to make them but somewhere around there Tohru is already getting ready to find a way to break the curse with Kazuma's help.

Yeah, well the anime stops around chapter 38 of the manga, which is right at the beginning of volume 7. Things are organized a little bit differently, and there's some stuff that was never put into the anime at all.
And before you ask, no I haven't read that far, I just own through volume 9 (soon to be through volume 11, just have to make some more desserts!). I know the anime well enough that I can flip through and say "no, that wasn't in the anime, but that was" and tell when we've gotten past the anime included content.
I'm slowly reading it though! My Japanese still isn't that good, however. *sad*

something a little OT but is the bird that you usually see with Akito a "sparrow?" i think that was it if not, does anyone know what kind of bird it is?

Well I always thought it looked like a sparrow in the anime, that or some other songbird. It definitely does not look like a rooster, but this may be different in the manga.
And as for the speculation that the bird may be the Rooster jyuunishi (was it Nairohe who told us about that?), well you never know. Its supposed to be an ox, not a cow and traditionally its a dragon, not a seahorse so Fruits Basket does change things around...

I did find some sort of link that might be parallel to the curse. ^^
In one version of the story, there's a race invovled and it was never meant for the rooster to join in. To prove himself, the rooster told god that he crows in the morning to wake people up. The humans sided with him and eventually convinced god to let him join the race.
In the race, the dog is about to finish the finish line but the rooster beat him to it because he "flew." I vaugely recall an attached legend to this about how why the rooster can't fly so far but I don't remember it nor do I have any websites for references... eheheh... but anyhoo, hint hint* The Dog and the Rooster are also two of the most powerful / positive / strong Chinese Zodiacs if you look up their compatibility chart (or something like that.) That may very well explain some powerplay between Akito and Shigure, in the MANGA. I rewatched Fruits baskets and there were actually some hints of it, it just wasn't as OBVIOUS the way it was in the manga. The anime only showed Shigure's devious smile. ehehe... sweatdrops* On another note, the DRAGON beat the Rooster which is why the Rooster is angry at the dragon on that version of the story. Hint hint* Do you think Hatori might actually have something up his sleeve? o_O I just don't see him as that type... then again, he hasn't r eally shown any... dirty work... -_o
Obviously, the Sohma's ancestor who brought this curse upon them must've done something extremely bad... and the two most important players to the curse is really the Cat and the Mouse but I can't form any theories on how they work into it or if the head of the family (god juunishi) is elected the way that the animal zodiacs rule for one year.

Seahorses look more like dragons than horses. Japanese culture mightnt have viewed them as horses.

Wait a second...Isn't there already a rooster and horse? I've seen them on manga sites...The horse is a girl that has long black hair, and the rooster is supposed to be Akito's favorite. I'm not talking about fan-fantasies here, I swear I've seen the real thing.

To get back to the main subjet,I think the curse weighs differently on certain characters.Shigure and Ayame don't seemed to have any trouble handling their curse,while Kyo has it much worse,and yet he is a healthy,if troubled,young man.Akito has so much of the curse within himself,enough to damage his health and make his death predictable.I don't think Akito would change into a weird juunishi hybrid though,maybe he would rather have a freakish form,kinda like Kyo's true form

Yep there is already a rooster in the manga: Kureno Sohma^^ Well If Akito dies the jyuunshi do NOT die as well. Akito just literally and physically gets hurt everytime someone is released. Rin isn't one of Akito's favorite's, Akito actually despises all women who try to get the Sohma men. Ren is the one who took a "liking" to Rin although she was just using Rin to find out what AKito was hiding.
As Darklightz said the way of the curse does rely heavily on the jyuunshi and how they feel. Although even though Hatori, Ayaa and Shigure seem hust frakishly fine with their curse ALL the members have their bagadge and hard times that have encountered thanks to the curse.
