From my understanding the best of 3 out of 5 matches needed to be won in order to win the round. So why did they have to win 5 matches sometime in the middle of the tournament? Did they agree to it, or did the rules change?

As I understand it, the battles are not limited to 5. If team A and Team B fight, and Team B wins the first 3 matchs, thus reducing Team A to two people vs. five, the fight is not over.
If the fourth member of Team A steps up, they can declare that they will continue to fight until they are killed. If that person then defeats 3 of Team B's people in a row, he has then evened the odds.
Besides, it's rigged like hell.

That sounds really complicated. I never even noticed that that had happened in some of the fights.
